Renowned chef and restauranteur, Luke Mangan, has plenty of restaurants in Sydney. And soon, he’ll open his first Melbourne venue in over a decade. Get ready for the relaxed restaurant, Bistrot Bisou. This casual French spot will soon appear on the corner of Flinders Lane and Spencer Street, as part of the boutique Hotel Indigo. The bistro and bar is set to open in early June.

The venue will feature modern takes on classic French dishes, with cocktails and a wine list featuring both French and Australian varietals.
“Melbourne has a real European feel to it – especially as we come into the cooler months – and French fare is having a moment, so I can’t wait to share my take with diners,” said Mangan. “We’ve created a thoughtful menu full of classics like steak frites, an incredible twice-baked gruyere souffle and apple tarte tatin, with modern twists.”
Dishes will be cooked over a wood-fired grill, with slow-burning ironbark and hardwood charcoal to add smoky flavours. They will also smoke their own salmon, and create house-made terrines from free-range Victorian roosters.
Bistrot Bisou will open for lunch from Wednesday to Friday, and for dinner from Tuesday to Saturday.
