Crown Melbourne is getting a $200 million redevelopment, with the precinct set to introduce over 15 new restaurants, bars and casual eateries, as well as revitalise the Riverwalk, and upgrade the theatre that is now known as Crown Live. And there’s some exciting venues for us to look forward to, including Mott 32, a world-renowned Chinese restaurant that is recognised by the Michelin Guide.

Mott 32 is coming to Melbourne
Mott 32 will open their first Australian restaurant right here in Melbourne. Recognised by Asia’s 50 Best Restaurants and the Tatler Dining Guide, this Hong Kong-founded restaurant has locations all around the world, including Vancouver, Singapore, Las Vegas, Dubai and Seoul.
Their dishes are mostly Cantonese, with Beijing and Szechuan influences, and their signature 42-day apple wood roasted Peking duck has been noted as the best in Hong Kong. There’s plenty of other standout dishes, such as smoked black cod, Iberico pork char siu, wagyu and seafood, as well as plant-based alternatives and plenty of dim sum.

“We’ve always positioned Mott 32 to show that Chinese cuisine belongs on the same stage as any cuisine in the world, in the top tiers of the most discerning global cities,” said founder Malcolm Wood. “Melbourne has been on our wish list for years thanks to its dynamic energy and global outlook.”
Mott 32 is set to open in March 2027.
More venues coming to Crown Melbourne

At the west end of the Riverwalk, you can look forward to Amaya Modern Mexican. Designed to capture the spirit of coastal Mexico, you can expect fire-roasted meats, fresh seafood and sharing plates. Sip on tequila and mezcal cocktails, while local DJs curate the vibes.
For more drinks and music, head to Barbershop Cuts & Cocktails. Find a hidden entrance to a cocktail lounge inside a working barbershop. Sip on whisky and listen to live rock ‘n’ roll in this moody space.
Both Amaya and Barbershop are expected to open in early 2028.

Also coming to Crown is Bellevue Bar & Terrace, a relaxed gastropub that’s set to open in November. Opening onto the Riverwalk, this venue will have pub favourites, as well as big screens for sports lovers.
Finally, Victor Churchill will open a bar and grill at Crown in mid-2027. The Sydney location was once described by the late Anthony Bourdain as “the most beautiful butcher shop in the world”, and the Melbourne flagship will invite guests to experience a bit of luxury on their plate. The venue will showcase their craftsmanship and reverence for produce, with theatrical service, a seasonal menu and intimate dining spaces.
Looking beyond hospitality, entertainment venue The Palms is currently under construction, and will reopen as Crown LIVE in November 2026.
