It’s been a good year for Andrew McConnell, Jo McGann and the culinary team at Trader House. Earlier this year, Gimlet at Cavendish House was named as one of the best restaurants in the world. And now, they’ve just signed the lease to a new cocktail bar on Flinders Lane, that will act as a “little sister” to the popular Gimlet.
Located at 165 Flinders Lane, and on the corner of Hosier Lane, the new bar will take over the ground floor of the 1924 neo-Renaissance building, MacDonald House. It’ll be just a few doors down from Gimlet. It will also be close to Supernormal, another popular Trader House venue, with Cumulus Inc. further up the road.
The cocktail bar will have just 28 seats, and no kitchen. The focus will be on cocktails, with bar snacks like freshly shucked oysters, sliced jamon and fresh sea urchin.
The team are currently in the early stages of ideas, planning and concept for this new space, including deciding on a name. They will continue to work with Sydney design house ACME, who worked previously on the glamourous Gimlet.
At this stage, the Gimlet cocktail bar is set to open in early winter 2023.
