The team behind Pinchy’s Champagne & Lobster Bar have opened a new and intimate oyster bar next door. This CBD venue, Pearl Chablis & Oyster Bar, is all about combining old-world elegance with contemporary and casual dining. Choose from an extensive range of Chablis and Burgundy wines, as well as premium oysters from around the country. Pearl is now open, and ready to meet you.
Pearl Chablis & Oyster Bar
Owned by Jeremy Schinck and Malcolm Singh, this speakeasy was inspired by the intertwined history between the Chablis wine region and oysters. This region draws its distinct minerality and saline quality from limestone-rich soil, formed from fossilised oyster shells during the Jurassic period.
“The vision and philosophy of Pearl celebrate their union,” said Schinck. “Oysters and Chablis naturally complement each other in their sublime taste, subtle minerality and underpinning saline characteristics.”
This bar sources its oysters from around the country, particularly the Oyster Coast of NSW. Enjoy daily specials from Pinchy’s Executive Chef Pedro Vicente, and try the oysters chilled, grilled, au natural, shucked on-demand and delivered to your table.
There’s heaps of varieties to try, including Rock Oysters, Pacifics and deep-water Angasi. For those looking for something different, there’s sea urchins and periwinkles too.
Meanwhile, other tasty morsels on the menu include duck liver parfait, trout rillette and beef tartare.
Pair your oysters with wine sourced from Chablis, and other regions of Burgundy. There’s over 500 reds and whites to choose from. Each month, Pearl will also celebrate one Chablis producer, so you’ll have a chance to taste rare wines and learn all about the distinct notes and characteristics of the region.
