Dining
The culinary team will be led by Executive Chef Michael Greenlaw and Culinary Adviser Mark Best. Greenlaw has 15 years of experience under his belt, and has worked at Michelin-starred and hatted restaurants, including Bibendum in London, Gilt in New York and Vue de Monde in Melbourne.
Meanwhile, Mark Best is an innovative chef who has worked in food for thirty years. He’s got a number of accolades to his name, including three Australian Chef Hats for a decade. Best is now widely known as a mentor in Australia’s food scene.
“Our vision for the dining experience at The Ritz-Carlton, Melbourne is driven by a quest for the unusual, the hard-to-find and the hyper-seasonal,” said Greenlaw. This journey will shape the way they source their produce, influence their menus and inspire the culinary experience for diners.
The signature restaurant will be on Level 80, so you can enjoy stunning views of Port Phillip Bay while you dine.
