I still remember the first time I ever set foot in a Sulbing. It was a snowy winter night in Seoul, and my friend was insisting that I try their shaved ice dessert, known as bingsu. When it came out, it was as if all the gentle snowflakes outside had gracefully landed into a bowl. Filled with sweet toppings, this delicate dessert was the perfect way to end the day. So, when this Korean dessert destination announced that they were coming to Melbourne, I could’ve jumped for joy. I’ve introduced plenty of friends and family to Sulbing Premium Café, and I’m now insisting that you go too.
It’s been over a year since this dessert café opened on Lonsdale Street, and even now, you’ll still find a line out the door.
Inside, you’ll find plenty of delicious bingsu options. The serving size is massive, and two people can easily share the dessert. Of course, if you’d rather have one to yourself, that’s fine too, as the shaved ice is incredibly delicate, and will surely melt away in your stomach.
Enjoy it with fruity toppings like strawberry or mango, or opt for something more decadent like chocolate brownies with whipped cream and soft cheesecake. Their signature injeolmi is delightfully nutty and earthy, and if you like matcha, you’ll want to try their green tea option. Pour a bit of condensed milk over your dessert if you’d like to sweeten things up a little.
If you don’t feel like bingsu, there’s also an assortment of treats in the fridge, like swiss rolls, shortcakes and honey butter bread. For something savoury, try their cheese teokbokki pizza, topped with spicy sauce and chewy rice cakes.
If you’re worried about the cold nature of the dessert, pair it with a warm coffee or tea. Sulbing Premium Café is also pleasantly warm on the inside, and makes for a cosy destination in the upcoming winter months.
