Andrea Da Como of Tipico and Nicola Dusi of The Hardware Club are old schoolmates and long-time friends. Together, they’ve decided to throw an event in celebration of Italian Labour Day, inspired by their familial traditions in Verona. Join them for an epic lunch feast, featuring a whole hog and delicious Italian wines, on Sunday May 1.

This nose-to-tail lunch will take place at Tipico in Windsor. There will be a four-course sharing menu, showcasing different cuts of the hog. Two dishes will be created by Chef Dusi, and the other two will be created by Tipico’s Head Chef Andrea Serelli. The hog will be supplied by Gary’s Meats from Prahran Market.
“In Verona, as we moved from the long summer days into autumn, we would group together with multiple families over a whole hog that would be meticulously butchered and split between the families to create multiple cuts that would be enjoyed immediately, or over time as cured meats to last through the winter months,” said Da Campo. “For our lunch we won’t be looking to make it last through winter, but to celebrate our favourite pork dishes with old amici, and hopefully new friends.”
The menus are inspired by dishes that they made every year in Verona, and come with their own unique take. The aim of the game is to create a memorable feast, with minimum waste. “Every part of the pig can and should be eaten,” said Dusi, “and we look forward to sharing some delicious ways to do that.”
The feast will be bookended with home-made aperitifs and digestives. During the meal, the dishes will be paired with lovely wines from Italy.
