Ottolenghi Flavour is out now.
It was by chance that Yotam Ottolenghi became a champion of the vegetarian-food movement. But fourteen years after being asked to write a vegetarian food column in the Guardian newspaper, the Jerusalem-born and London-based chef continues to excite our palates in ways we never knew were possible with just vegetables. And not just ours, but those of millions if sales of his multi-award-winning cookbook series, PLENTY, are to be used as the metric. Now, the third installment in the series has arrived and Flavour, co-written by Ixta Belfrage, continues to explore the limitless potential of veg as well as how to transform and combine them into mouth-watering dishes.
To celebrate Flavour, Yotam Ottolenghi is returning to Australia in 2021 to further disclose the stories behind the recipes, offer insightful advice on being a restaurateur, and, obviously, give plenty of tips and tricks on how to cook veggies.
Flavour itself is divided into three parts — ‘Process’, ‘Pairing’, and ‘Produce’ — where Yotam and Ixta break down what creates flavour in food as well as brand-new ingredient combinations. Their past revelations awakened us to rosewater, molasses, sumac and za’tar (to name but a few), so we’re very keen on finding out how else we can further enhance our dishes. And we much prefer listening to the man speak than drooling over the 100 recipes featured in Flavour.
