Every month, a new baked good seems to take over TikTok. This time, though, it’s extra chewy, glossy and coated in that signature pistachio chocolate soft shell. Meet the Dubai chewy cookie: the Korean take on Dubai’s viral chocolate creation by Fix Dessert Chocolatier—and it’s officially arrived in Melbourne.
What Is The Dubai Chewy Cookie?
In Korea, it’s known as the “dujjonku“—a mashup of “Dubai” and “chewy cookie”. The viral dessert was originally crafted by pastry chef Kim Na Ra, who first made the marshmallow-coated cookies before a customer suggested adding a gooey Dubai-style filling (which has now become synonymous with pistachio and kadaifi). The rest is pastry history.
Kim told the documentary series Little Big Masters that her bakery now pumps out more than 30,000 chewy cookies a day, with 50 staff members. Even big-name chains couldn’t resist the trend. In fact, Starbucks Korea launched a limited “Dubai Chewy Roll,” rationing stock to just 40 per store per day—though that didn’t stop the early-morning queues.
So, what makes it special? Each cookie hides a stretchy, mochi-like centre wrapped in a soft marshmallow shell, then dipped in pistachio or hazelnut chocolate powder. It’s sweet, nutty and gives a satisfying pull, much like a cheesy treat.
