A new rooftop bar has just opened on Flinders Street, offering stunning views of the Yarra and beyond. Stretching 68 metres above the bustling street, Fleet is sailing its way into the rum renaissance, with over 70 types of rum from around the world. You’ll also find plenty of gin, and timeless cocktails with a nautical theme. The Fleet rooftop bar sits on top of Vibe Hotel Melbourne. It’s now open for you to check out.
Fleet Rooftop Bar
Head up to Level 22 and take in the view from this rooftop bar. The 90-person venue was transformed from the hotel’s former penthouse apartments, and is now a stunning place to unwind and watch the day turn into night. Perfect for all seasons, Fleet has an outdoor terrace and a retractable roof with glass panelling. Inside, you’ll find warm amber and dusty pink tones, as well as custom made furniture.
Perfect for pirates and other rum fans, Fleet has a carefully assembled drinks list with over 70 kinds of rum. Curated by award-winning mixologist Grant Collins, you’ll find local distillers JimmyRum and Boatrocker Distiller alongside rum producers from Guatemala, Puerto Rico, Jamaica and Cuba. There’s also a rare and vintage bottle collection, dating back to the 1930s.
Continuing with the nautical theme, you’ll find plenty of gin, which was a favourite drink in the navy. Sample 50 different gins from local and international producers, like Four Pillars, Base & Flinders and Patient Wolf. If you feel like something else, there’s also a wide selection of whisky, craft beer and wine to try.
As for cocktails, you’ll find classics, signature blends and experimental combinations. All of the drinks have a distinct Melbourne-style and nautical flavour.
The traditional Piña Colada, for example, has an extra spin, featuring pandan, gold and spiced rum, coconut, pineapple and lime. Meanwhile, the Hurricane cocktail is inspired by the hurricane lamp on tall ships, and features gold rum, navy rum, pineapple, orange, lime and passionfruit.
While you’re there, keep an eye out for the old-fashioned martini trolley. This trolley will be wheeled between tables, offering you a choice of Classic Dry, Olive Leaf, or even an Oyster Shell Martini, which uses oyster shell infused gin or vodka to add savoury notes.
As for food, Chef Asish Kuma has created a menu for snacking. This bar menu pays homage to some of the best producers in Victoria. Graze on seared scallops topped with Yarra Valley caviar, braised pork cheek croquettes, grilled corn tostada and more.
Fleet is open from Tuesday to Thursday, 3pm until late. From May 16, this rooftop bar will also open from 12pm on Thursdays, Fridays and Saturdays.
