Tokyo’s famed ramen house Ginza Kagari has officially opened its first Melbourne location, bringing its internationally acclaimed Tori Paitan Ramen to Russell Street from 14 February 2026. The launch marks the Australian debut of a brand celebrated for transforming ramen from a budget staple into an art form—one bowl of silky, golden broth at a time.
Founded in a tucked-away alley in Ginza in 2013, the restaurant grew from an intimate eight-seat counter to a globally sought-after dining destination, earning Michelin Guide Tokyo Bib Gourmand titles and a cult-like following. Now, Melbourne diners can experience the signature chicken-based broth that put Ginza Kagari on the map—creamy, complex and as comforting as it is elegant, every spoonful revealing layers of umami-rich depth.
Behind the concept is chef-executive Makoto Iwata, who merges Japanese tradition with French and Italian technique. Drawing on ryokan-style hospitality, Iwata created Ginza Kagari as a place where warmth, refinement and expertise could coexist in one humble yet luxurious ramen bowl.

Ginza Kagari‘s Melbourne space reflects that philosophy: understated design, thoughtful service and an emphasis on balance—both in flavour and atmosphere. Consequently, each bowl of Tori Paitan features rich chicken broth, tender chashu and seasonal vegetables, redefining ramen as something to be savoured, not slurped in haste.
To celebrate the opening, diners visiting between 14th-20th February will receive a complimentary bow of rice with raw egg—a traditional Japanese pairing—with every order of Tori Paitan Ramen. As a result, only 60 servings are available per day, adding a little exclusivity to an already in-demand experience.
