Melbourne’s omakase scene has quietly welcomed a new addition, with KIRISHIMA opening its doors in Camberwell.
The intimate restaurant seats just 12 guests at a chef’s counter, offering a meticulously paced $260 23-course omakase experience designed around seasonality, storytelling and close interaction between chef and diner.
An intimate dining experience inspired by Japan

Taking its name from the Japanese words for “misty island”, KIRISHIMA aims to create an experience that gradually unfolds throughout the evening.
Inspired by the atmospheric landscapes of Japan’s Kirishima region, the restaurant uses deep navy tones, soft lighting and natural timber finishes to create a calm, immersive setting that keeps the focus firmly on the food.
Additionally, the chefs present and explain each course directly, giving guests insight into the ingredients, techniques and influences behind every dish.
A menu shaped by the seasons

The menu follows the rhythms of the seasons, with ingredients and courses changing regularly throughout the year. Guests can expect a carefully structured progression of dishes designed to showcase balance and the natural character of each ingredient.
Consequently, throughout the evening, chefs personally introduce each course, helping diners better understand the produce on the plate and the seasonal influences shaping the menu.

Led by a chef with decades of experience

At the helm is owner chef Jun Park, who brings more than two decades of experience in Japanese cuisine. Throughout his career, Park has worked at acclaimed venues including Nobu, Saké Restaurant & Bar and Toko Restaurant in Sydney, and previously served as Head Chef at the two-hat omakase restaurant AOI TSUKI.

According to the team, KIRISHIMA avoids excess and spectacle. Instead, it unfolds through restraint and flow, allowing the atmosphere, ingredients, and interactions with the chefs to reveal themselves naturally over time and to linger softly even after the evening has ended.

KIRISHIMA is now open at 622 Camberwell Road in Camberwell, offering a seasonal 23-course omakase experience priced at $260 per person, with opening hours running Wednesday, Thursday and Sunday for a single seating from 6pm to 8pm, and Friday and Saturday with two seatings from 6pm to 8pm and 8:30pm to 10:30pm.
