During Melbourne’s 2020 lockdown, Rosemary Andrews baked thousands of cakes and desserts at Attica during its takeaway period. Then, as Head Pastry Chef of Attica Summer Camp, she collaborated with Ben Shewry on the viral dessert trolley, topped with cakes, trifles and more. Now, after two years of searching for the right location, Rosemary has finally taken the leap and opened a pop-up bakery. Look forward to decadent treats at Mietta by Rosemary in Malvern. This bakery opens on Saturday December 9 at 10am, and will stick around for six months.

This elegant bakery will have a strong focus on Rosemary’s signature layer cakes. Indulge in decadent creations, like the Honey-Misu layer cake, the Espresso and Dulce de Leche layer cake, and the 8 Layer Carrot Cake and Honey. You’ll also find other exquisite sweet treats, such as two-texture Valrhona Chocolate Cake, Lemon Tart and Dulcey Baked Cheesecake. Other baked goods, such as Rosemary’s famed focaccia, will make an appearance.
“When I first started by dessert box business during lockdown, my goal was to make people feel joy, to bring them happiness,” said Rosemary. “Mietta reflects my career and what I am about — quality, delicious cakes that delivery happiness. Mietta is also a good opportunity to evolve from the Instagram platform to see how the community support responds long-term to a bricks-and-mortar pop-up business.” If all goes well over the six-month period, it will be the stepping stone to opening her dream bakery.
In the pop-up store, you’ll also find a soft-serve machine. “We’ll be serving vanilla soft-serve made using Gippsland Jersey milk with Valrhona chocolate sauce at the opening,” said Rosemary. When doors open, there will be over a thousand cake slices available, as well as slabs of focaccia, ice cream and Market Lane coffee.
Mietta by Rosemary will open on Fridays, Saturdays and Sundays, from 10am until sold-out.
