The historic Saint building has reopened in St Kilda. This iconic location on Fitzroy Street has had many forms over the years, including a bank, a pub and a nightclub. Now, it has been transformed into a multi-level foodie paradise. Discover five distinct venues under one roof, including a fine-dining space and a cocktail bar. On top of that, Saint Hotel also has a range of private and semi-private dining rooms. Three of the concepts are now open and ready for you to explore, with more to open at a later date.
The building had a full interior renovation to create the five spaces. Construction business Field Group and Melbourne architects Telha Clarke joined forces to create distinct looks. Every detail, from signature scents on each floor to custom pendants, was carefully considered by the team.
On the ground floor, you’ll find Saint Dining. Headed by Executive Chef Gary Lai, this space brings a unique fine-dining experience to St Kilda. Expect a protein-focused and produce-driven menu, celebrating modern Australian cuisine. The menu is built around a Josper charcoal grill, and everything, including dessert, is touched by the grill. Choose from a selection of premium cuts of beef or seafood, and pair it with sauces and sides.
On the corner of Fitzroy Street and Canterbury Road, you’ll find this smart-casual bar and dining room. Adjacent to Saint Dining, this space features high banquette seating for you to enjoy a drink and a snack. You can also enjoy something more substantial, like the Saint Burger or the prawn katsu sando. Meanwhile, an extensive drinks selection is available for you to try, including signature cocktails, beers, non-alcoholic options and a wine list with over 200 choices.
Located on the ground floor, this wine cellar will be a street-facing bottle shop and intimate tasting venue. Choose from an extensive list of wines to take home, or sit, sip and enjoy snacks from Saint bar. The Vault includes a dramatic stone tasting table, and will open later this year.
Journey upstairs and check out this nod to both Saint Hotel’s address on 54 Fitzroy Street and New York’s infamous Studio 54. The atrium features a mixture of booth and table seating, perfect for you to enjoy a drink and snack. There’s also a sun-filled terrace that looks out to relaxing palm trees. At Bar 54, you’ll find produce-driven bar snacks and a curated drinks and cocktail list.
This cocktail bar and listening lounge is set to open mid-April. Discover a cocktail menu with a seasonal and inventive focus. Stellas will also feature a custom-designed sound system by Pitt & Giblin, so you can listen to a line-up of DJs on Thursday and Friday evenings.
