Peel back the mysterious dark curtain inside Melbourne’s Courtyard by Marriott, and discover a hidden burger bar. Created by Yorkshire-born Chef Sean Connolly, this secret space will transport you to a New York-style speakeasy. You’ll find Shush Burger on the fringe of Melbourne CBD, near Flagstaff Gardens. It’s due to open this March.
Shush Burger
This new restaurant will be Connolly’s first in Melbourne, after opening up venues in Sydney, Auckland and Adelaide. You’ll find Shush Burger on level one of Courtyard by Marriott, with the entrance obscured behind a dark curtain. Once you’re inside, you’ll relax in the neon-lit space, and enjoy flavoursome and unpretentious bites.
For something classic, try The Standard, a smash beef patty topped with white onion, pickles, Dijon and ketchup. Elevate the classic by trying the Bacon Lux, which adds cheese, apple wood smoked bacon, lettuce, tomato, caramelised onion and chipotle BBQ sauce.
Chicken lovers will be satisfied with the Buttermilk Fried Chicken, made with house slaw, pickled jalapenos, and balanced with lemon kewpie mayo.
Pescatarians can enjoy the Fish Burger, with crumbed hake, smashed avo, sweet pickles and tartare sauce. There’s also a Vegan Burger made with plant-based beef, double cheddar, caramelised onion, Russian dressing, onion rings, grain mustard mayo and dill pickle.
All burgers are served on potato rolls, but are also available naked, served between lettuce and with no bun.
Shush Burger will also feature a range of snacks and sides, like oysters, soft shell crab sliders and pork belly burnt ends.
Of course, it’s not a burger bar without some drinks. Sip on a range of beer, cider, wine and sparkling, and enjoy their range of cocktails. You’ll find favourites like Negroni, Espresso Martini and Aperol Spritz.
