Australian truffle is the star of this feast.
In Australia, truffles grow and can be found from May through to August. Unfortunately, the ingredient considered by some to be the diamond of the kitchen, by others to improve every dish and scientifically proven to be alluring to us humans, does not store well. In other words, the window of opportunity to eat fresh truffles is quickly closing which is only part of the reason why this six-course degustation dinner is so enticing.
Prepared by chef Thomas Damm, one half of the creative duo that gave us edible cocktails and head of Damm Good Catering, this truffle degustation is going to bring out the best of the locally sourced ingredients they are matched with. From the opening dish of truffled baked camembert with rosemary honey to the evening’s finale of red wine quince served with a warm truffled sheep’s milk cheese parcel, pistachio sponge and mulled white pear, your palate will be in paradise.
But just so you know exactly what you’re getting into, the other dishes on the night are a steak tartare served with a potato truffle foam followed by a steamed coral trout with truffle ricotta gnocchi, a lobster and truffle tortellini in bisque foam and the mouth-watering 24-hour smoked lamb shoulder served a truffle red wine jus on a truffle cauliflower puree.
It sounds like a lot of truffles but in the hands of Thomas Damm, who began his culinary journey in some of Germany’s best Michelin-starred restaurants before sharpening his knives at the Melbourne Club and the Stokehouse, we have complete confidence that it will be just the right amount.
If you so choose, all six sumptuous courses will be paired with wines from two of Victoria’s finest wineries, the historic Brown Brothers as well as Yarra Valley’s Innocent Bystander. Both produce drops that, like the dishes you’ll be feasting on, are adventurous and worth savouring with friends.
This six-course truffle degustation takes place at one of Melbourne’s premier cafes, the good as gold Au79. Located in Abbotsford, the cafe is also a coffee roastery, chocolatier, bakery and patisserie and no stranger to quality. In fact, you could say that quality is all that they do and this dining experience is no exception.
